Chettinad Curry Recipe

A slightly spicy, creamy curry that’s a brilliant and quick meal anyone can cook. This is my recipe, but so long as you cook the sauce in the same way you go to town with what else you add in. Sub in king prawns for the chicken, swap the peanut butter for almond butter (or remove it completely), chuck in all the veggies you have to hand. Just make sure you add the salt & sweet element to make the flavours really POP.

 

  1. Splash a little oil in a pan (wok for preference because you immediately look like a professional with a wok). Add 30g of the Chettinad mix and sizzle over a medium flame for 10 seconds.
  2. Throw in a tin of coconut milk (400ml), and leave to bubble through until oil pops to the surface.
  3. Add your protein/solid veggies (chicken, butternut squash, whatever is sitting in the fridge). Add a hearty tablespoon of Peanut Butter (aim for the no palm oil or added sugar ones, because they just taste better)
  4. Drop the heat to a simmer & cook through until the chicken is edible (not pink hun)/ butternut squash is, well, squashy etc
  5. Add a pinch of salt (or fish sauce) and a dash of something sweet (cane sugar, honey, agave) to taste and serve.
